Yeah, its cold...and icy outside. Delaying my commute a bit this morning, so I thought I would take this opportunity and blog.
I am shocked, absolutely shocked, that Irving ISD is closed. They never close. They are probably in shock as well. Kids were prolly waiting for buses, somehow knowing the evil overlords of IISD wouldn't allow a closing. But, apparently...they gave in and thought of the safety of the kids! Yay!
I am working on a project I started ages ago and then let go by the wayside. I am now dedicated, nay...I am devoted....nay, single-minded...yeah, I like that...single-minded in my quest to rip ALL my cds to my Itunes. This sounds so simple. I know. BUT...I have so much music that just sits in a digital lockdown as a cd and I never listen to cds. I will FREE you, music!! Be free like the birds! Or at least, as free as what is in my itunes, and then eventually in a playlist that makes its way to my nano. :)
My cat must think the floors are too intolerably cold for his little feets to be on. He absolutely refuses to get out of my lap. Maybe its because I am a radiant heater all by myself. Chupa would curl up in my lap too, but I only have room for one animal right now. Mike gets the dog. She is eyeing me with a
how could you?" look. Sigh. I might have to start an alternating sequence for them. Grrr
I hope the roads clear up soon. *gasp* I do actually have alot to get done. I want to make sure I can get these files ready for Janet. I don't want to be the weak link, ya know?
I am also hoping that the roads aren't too bad tonight. Nacheaux and I have plans to scout for the Pre-Lube pub crawl for TXIH. YAY!
K...I am gonna do something productive.

Curry
I have decided this may be the year of Curry for me. My first foray into this splendid world of spice is timid. I have decided to take the generic recipes I have found online for sweet potato fries and kick it up a notch. I have added some West Indies Curry to my sea salt and cracked black pepper and tossed them with the potato wedges and olive oil. I don't know for sure how it will turn out, but right now, it smells FABULOUS in the oven.
**** The sweet potato fries came out perfectly! Here is my little recipe:
Heat oven to 425.
Wedge your potato into whatever size pieces you like (we used 1 big sweet potato)
Make a mixture of 1 TB sea salt, 1 TB cracked pepper, and 1-2 TB West Indies Curry Powder (keep in mind, this mix is actually something I bought in St John. It has cumin, coriander, tumeric, curry, cinnamon and some other miscellaneous spices in it).
Toss the sweet potato wedges with 1-2 TB olive oil (use the good stuff)
Toss in the spice mix and toss to cover.
Throw all the wedges on a cookie sheet or pizza pan (preferably, one with edges that come up) and put in the oven for 30-45 minutes. Flip them at half time.

Jasper?
The name Jasper is very cool. I wonder how many new children will be
named Jasper, Alice, Edward, Bella, Jacob, Carlisle, or Esme in the
next few years. I think of those names, Jasper, Carlisle and Esme are my faves.

Blogs I meant to post (Splenda Mocha!)
Trying something new: Splenda Mocha flavored coffee sweetener. Its
awfully sweet and tastes more like weird chocolate covered cherries than
sweet, chocolatey coffee. I prefer to take a packet of hot chocolate and
pour coffee on top of that..but it has too much sugar. Sigh. I am gonna
have to experiment with this. Sugar is bad, but coffee is good.
BTW, I didn't end up liking the Splenda mocha stuff. I went back to mini moos and a small packet of sugar. Sigh. One a day won't kill me.

Called Out
So I have been told that I am delinquent. Not A delinquent, but

I do realize I have been quite the slacker in regards to
communication. I apologize. In an effort to make up to you, especially
KK, I offer you this fantastic blog posting.
New job:
I am happily employed again! I have not been able to completely escape
the evil clutches of the mortgage industry, but I have decided to take
another path in that realm. I turned down two closing jobs (paying
pretty decent and one working with a woman I just ADORE) to try my
hand at learning processing for a pretty big producer. I think being
on this side of the fence could be an eye opener for me. Plus, I will
just learn more…and its always good to broaden your horizons. I am
essentially starting over in the food chain, but I am hoping it will
pay off sooner than later. Pay kinda sucks, but it is a paycheck
and the building has a kickass gym that I have access to. I also have
a gorgeous view of the Dallas skyline from my 8th floor perch in
Plano. The people are cool and I have a lot of room in my cube.
So…its all good.
Bandera:
Pros – Got to hang out with my favorite people! I love being able to
spend time in the out of doors with my girls (and associated token
men). We did, however, miss those who could not attend…but there is
always next year! We had some enthusiastic newbies too, who seemed to
be hooked. I didn't finish this year, as my knees were killing me…but
it got me inspired for the year and I am hoping that will translate
into my getting ready for Palo Duro 50k come October. WOOT!
Cons – Its like they want the 25k'rs to stop attending. Crappy
tshirts, no lunch, no food at the first two aid stations. Sheesh!
I will post on our trip to St John when we return.
