little things...

I have found that I have to tell myself to be happy about little things at work to get excited about coming in, since I seem to spend so much time up here now.

Tomorrow's joy? I get my order of new red ink gel pens! YAY!

feigned excitement a bit much? maybe...but its something....

** updated 3/28: no red pens yet, but Rosie hooked me up with a pink, green and PURPLE gel pen. SCORE!

I can do only one thing at a time.

Seriously. I know that is profound...but its true.
While I am fast, efficient and usually an exceptional "multi-tasker", the physical impossibility of my completing the tasks set before me in some instances is very real.

People need to learn to deal with it.

where is my sunscreen?

So, this weekend was a little different than I had anticipated. Originally my plan involved a day full of drinking and revelry on Saturday - following by an "after party" at the Tipperary Inn. On Sunday, my plan was to go on the bike hash and hang out with my other hungover compatriots.

Well, I got about 1/3 of that goal accomplished. The parade was a blast. The hash was pretty straight forward and got us to III's where games of flippy cup ensued.

Then, the plan was abandoned. It's not a bad thing...its just a thing that happened. I did get to swing by Jeremy's for a bit to see the gang...and we did get to eat at Campisi's with the hashers.

Oh yeah...and we got locked out of our house. Good times. :) Actually, even in my extremely sunburned state and not being able to get inside our house, Mike and I had a good time. We sat out on our porch and lit a fire in the Chiminea and chatted until the locksmith got there. We can always have fun...regardless of physical pain and unfortunate circumstance.

Sigh. I am still very very burned. It was stupid and irresponsible not to wear sunscreen. Now my face is all puffy (no, I will not post any pictures) and it is tight and hurts. Sigh...and I am at work. Luckily only one person has seen me so far. Ugh.

Maybe it will heal quickly. Keep your fingers crossed for me and Mike....his skin got a little toasty as well.

"biblical duty to stop global warming"

I often make my views about the SBC pretty clear. As a standard, I think most of the doctrine is entrenched in a sense of denial of reality. As with any organized religion, I think there are many good things about it...but they so often get lost in the negativity and shell-like culture that their members surround themselves with. I am not blogging about those things today, though. I am actually surprised and refreshed to see that they are doing something I can agree with. (even though I honestly think it took them far too long...but that is another blog entry!)

Here is what I think is great about it...
It falls into step with the belief that God's followers should be good stewards of what He has provided. While I have always thought that Baptists (and most denominations of the Christian faith, actually) have adapted this to their own convenience, I am glad to see a shift from this standard. I have always thought that if you believe God created the earth and everthing in it, then you should treat it with due respect. Much is made of the whole "my body is a temple" frame of thought, but what about where you live? I find it amusing that the body of the church can get up in arms over someone having a drink on occasion, but if that same person abuses the resources of our earth and leaves an irreparable mark on the face of our planet...isn't that just as bad? They say all sins weigh the same, right? So, if Moses didn't have that on his etched stone, it doesn't count. Bah. I call major BS. I think that this manner of belief is along the lines of "well, that won't affect me, I will be dead by the time the ice caps melt." Keep in mind, I don't know for sure what all the causes and fixes are for global warming...but I do know that there are oil choked oceans and entire species of animals being wiped out by our carelessness. I highly doubt God would approve of that, especially when he made Noah build an ark big enough for two of EACH animal way back when.

Sorry, got off topic for a bit. Here I am supposed to be praising them for making a good decision!

The power of the SBC is undeniable. They are able to mobilize registered voters and have significant impacts on elections. They are able to shape and mold the minds of youth and support the careers of many adults. They use this means of culture shaping everyday...in big ways and in small ways - and not always to my liking. However, this is a step that brightens my outlook on any otherwise jaded and somewhat angry view of the SBC. It's just one step...but at least it is one in the right direction.

I was lucky this Wednesday. How so? I was able to be there in support of a good friend getting a meaningful and beautiful tattoo AND I was able to see and wish good luck to a really cool guy before he heads overseas to do humanitarian work.

It was a good night. I got the warm and fuzzies.

3:10 to YUM!

Last night I attempted something new. I cooked two things I have never cooked before.
1) Pancetta. This isn't a seriously outlandish thing to cook, but I have never tried to cook it...even though I have deliriously wanted to after watching "Everyday Italian".
2) Scallops. Honestly, cooking this type of seafood intimidated me...I don't know why, but I was actually frightened at the thought of over or under cooking these delicate little morsels of flavor.

All fears aside, I mapped out my plan of attack. Armed with 1/4 pound of pancetta, 1 pound of collosal sea scallops, some fresh (organic) spinach, fresh garlic, olive oil, salt and pepper, and some fetuccine...I dove into the kitchen. (oh! And a bottle of Toasted Head Chardonnay).

First things first...started the water to boil for the pasta. Then carefully sliced the garlic into perfect slivers of goodness. I also took the pancetta and cut it into gorgeous little cubes. I heated up a cast iron pan and dropped the pancetta into it. Sizzle, pop, aromas...yum! That stuff smelled SO good. Pancetta is pretty much a cured, Italian style bacon, with a nice seasoning to it. I cooked the pancetta until it was kinda crispy and brown on the outside. Then I removed the pancetta from the cast iron and dropped in the garlic slivers. Ooooooooooooooooooooooooooooooooooooooooooooooh lordy that smells fantastic. I cooked the garlic until it was translucent and occasionally brown on the edges, then removed it to the same bowl where I had the pancetta waiting. By this time, the water was boiling and I tossed some fetuccine in the boiling, salty water. I threw some of the cooked pancetta and garlic into a larger pan with some olive oil and then threw a few handfuls of fresh spinach leaves on top. Just cooking this till it wilts.
As my pasta and spinach cooked, I enlisted the help of my very tall - very adorable - boyfriend to help me test the scallop cooking premise. We heated the pan and carefully placed one of the shimmery globs into it. We cooked it until each side had a crispy brown crust and the middle was opaque. We took a few bites. SCORE! (I wanted to test one before throwing the rest in the pan!) We cooked up the rest of the scallops...and while they were sizzling away, I drained the cooked pasta and put it in a big bowl. Tossed along with the pasta was about 2 TBSP of olive oil, the cooked pancetta, the garlic and some red pepper flakes.

Laying out the food on a plate was fun...first the scallops in all their grandness. The smell was sooooooooooooooooooo lovely. Then, we plated up some fetuccine (making sure to get plenty of pancetta and garlic). Then we grabbed some of the cooked spinach and threw that on there. As a topper, some fresh grated Parmeggiano-Reggiano. Paired with a luscious glass of white wine. I would say this was a fantastic meal for a Monday!

Sigh. We ate our lovely dinner and watched 3:10 to Yumma..I mean, Yuma ;)
